Gluten, Soy, Corn & Dairy free

The gluten, soy, corn & dairy free diet is going fairly well. Although I have discovered corn hides in the oddest of foods. Baking powder? Really? Dang. This is difficult. But I am trying to remain inspired and look at it as a challenge. (I am SO craving pizza). I feel so great! I didn't realize how much inflammation the foods were causing. I feel like a different person! My blood pressure is much lower now (was 140 over something when I first went to naturopath now it is 110 over 72). I am not experiencing as much pain and even my headaches are much better! Now if I can just avoid that pizza...

Gluten free & Hypothyroid

Well after years of expensive tests and stupidity with western docs I finally gave up and went to a Naturopath. I haven't felt this good since I was in college. If ever. I can't recommend Dr. Molly Force in Port Townsend highly enough. She has given me my life back. Turns out for years I have had hypothyroid and am super allergic to gluten. For years I asked to have my thyroid tested and thought it had been...the doctor made a mistake. I sort of knew about the gluten...I have tried in the past to go gluten free and or cut down on it. But now I have to go completely gluten free. I am also allergic to soy, dairy, corn, almonds, sesame,beef and peas. Combine that with my anti-inflammatory diet that rules out a lot of food. I usually cook from scratch thank goodness so that makes things easier.

Went blackberry picking this weekend. Picked more than enough to make some fresh blackberry ice cream. I make a yummy mix of yogurt/ice cream/sorbet. Turns out fab. Now to write down the exact recipe! I am working on my cookbook this week. I think it is going to end up being more than one. Today I am writing down recipes...not easy when I don't use exact measurements. Soon I will be testing the recipes. Fun!

I just finished making this steampunk owl with my friend Denise Weir. It is available for sale on my sim Axis Mundi in the game Second Life. Here is our process on this particular piece.

And then once the pieces were imported into Second Life I finished building the character in world and added hand painted textures. You can see that along the process the eyes changed and his personality changed a little bit:

I love the small town I live in. We currently have a lot of construction on our highway which is the only way in and out of our area other than by boat. Most people around here wave at the construction people rather than yell or honk or flip the bird or whatever nutty thing stressed out people that are in too big of a hurry to get to Starbucks do. Today a lady in front of me who was driving the cutest little old red VW bug threw suckers out the window to each group of constructions workers we passed by. One looked baffled...but the next yelled It's the sucker lady!!! Then the men scrambled to pick up the treats. Sometimes the small things in life are more important than we realize. It was nice to see someone bringing joy instead of being grumpy. Thank you Sucker Lady.

Well...this one is a chipmunk but it snuck in the house when the sliding glass door was open a bit and created mass chaos.

This is a little woodrat who likes to steal seeds from the bird area. Woodrats are much cuter than norway rats. They look more like giant mice and have huge cute ears and eyes.

Found this yellow spider in the flower garden. I hope it is eating a lot of annoying pests like aphids and things! Someone mentioned that my yard looks like a lot to keep up with. Well it could be...we chose to keep it all a bit wild so that the work is more minimal than if it was all manicured. We also use less water that way and the birds and wildlife have more areas to live. We also have a bit of a mess inside the house and probably spend more time outside doing things than cleaning. (laughs)

We added some straw to our potato bin to hopefully increase the potato yield this year. The straw is a bit soggy now because of our weather so I am hoping I haven't made a poor choice.

Our potatoes are making great progress! They have grown so fast. Last weeked I added straw so they will have more room to produce. If I get around to it I will add some long poles to the 4 corners and run wire around so that as they grow taller they will have even more room to make potatoes. I also took the top screens off last weekend.

Buying local means...no celery

I have no celery but I want to make a potato salad. So what did we do? We went out in the yard and cut down a thistle. It looks and tastes very much like celery when cut and trimmed. Most people cook the stem if they are going to eat it. But it was great in this potato salad. It didn't keep long though so I would recommend making just enough to eat in a day or two.

Apple Pie on the fire!

I have been wanting a pie iron for a while now. We found one at our local hardware store (they have everything at Henery Hardware). So I made some pie dough with gluten free flour and instead of lard I used a spectrum vegetable shortening. I also made an apple cinnamon filling. Then I just pressed the dough in the bottom of the cast iron pie form and then put some filling on. So it would not be too dry I added some rhubarb jam that I had made a few days before. I added about as much as I thought would fit in the pie form and then added the top. I pinched the dough together and put the top of the form on. Then I stuck in in the fire and checked on it every couple of minutes. I think it may have taken about 8 or 10 minutes in the coals and it was done. A perfect apple pie on the camp fire!

Pot O' soup with fresh noodles

I threw some of the left over homeade noodles in with whatever veggies were in my garden and at the farmers market last week. I added some water (you could use any kind of broth for more flavor) and I had a yummy homeade soup. This one has carrots, cabbage, leek, rutabega, and some kind of purple green that I don't know the name of.

Recipe for those crackers

Ok I am bad about following any kind of recipe...so this is sort of what I did to make the crackers.

I cut 3 tablespoons of butter into 3/4 cup of bobs red mill gluten free all purpose flour. (Cut like you would if your making a pie crust my house is cold so this is a challenge...I used a fork because I don't have a pastry cutter). Then work in 1/2 or a bit more cup of cheddar cheese (measured after grating) into the dough. Don't let the dough get too warm from your hands or you will have mush. Think grandma's pie crust trickyness. Yup. Then add a dash of salt and some dried dill. Blend one egg yolk with 1 tablespoon of water and add. Start working the dough add more water as needed. You want a firm dry dought not a sticky one.

Then I make my dough into a bit of a flat shape before I roll it out. You don't want to have to use too much flour to keep this from sticking at this point or the crackers will have a lot of flour on the outside when you eat them. It doesn't absorb as much as it would with a wet dough.

Roll out, cut and then back at 350 for about 8 minutes.

I have been making my own gluten free crackers lately. It isn't as hard as I would have thought! It was pretty easy actually. I used Bob's Red Mill gluten free flour. This recipe just has some butter, a little salt, a lot of shredded orange cheese, an egg and a little cold water. I added some dill too The texture was flakey and it was like a better version of a cheese nip.

With food and gass prices rising I decided to try to cook as much as I can from veggies from the farmers market in the nearby town and the food I grow in my yard. A couple of weeks ago when the market started there was not a lot to chose from. But it was fun thinking of dishes to make and it even got me to like rutabegas. Not jerusalem artichoke though...I am still not fond of that.

This is what I had to work from:
Rutabega and Jeresalem artichoke

The first night I made pasta from scratch and added a rutabega, leek and carrots that had overwintered in my garden

I also added some mustard greens and herbs from my garden and garlic

My seedlings are growing! Here they are a few days ago when they were still tiny.

So far I have planted artichoke, eggplant, cabbage, chives, thyme, acorn squash, lemon and sweet basil, mesa queen squash, brandywine tomato, delicata squash, black plum tomato, cherry tomato, dill, copra onion, scallions, red scallions, pumpkin, black beauty zucchini, stupice tomato, rockette, cucumber, and butter squash.

Growing your own food

Today I planted all kinds of things! Last year almost everything I tried to grow grew. Most of it really well. I decided this year to try to grow even more of our own vegetables. So today outside in containers I planted watercress, miners lettuce and a lettuce blend. Inside I started green and red scallions, black zucchini, a yellow squash, acorn squash and some dill. I am even trying to grow luffa this year to see if I can make my own sponges.

I have been busy in second life creating avatars with Juliet Ceres of bitter thorns. Juliet is building mechanical creatures from my paintings and I am doing the texturing.

This is a prototype for Forrester...it is not quite done yet. What do you think?
